
Have you heard of yeast dough? Yeasts are wild yeasts. They are a simple mixture of flour and water that starts to ferment when exposed to heat. This is exactly what they tried and found the yeast dough to be extremely tasty! Of course, as baker's yeast has only one type of yeast, there are over 50 different types of lactic acid bacteria and over 20 types of naturally occurring yeasts in yeast, which creates a fuller flavour.
It takes about 4 - 7 days to make a dough like this, so they found a way to simplify it - after some testing, they found the ideal mix and a way to create a dough with yeast that you can freeze and that stays airy and tasty.
